Looking for a gluten free alternative to wheat flour waffles? Try using almond flour.

 

Ingredients:

1 cup Almond Flour

pinch of salt

1 tsp baking soda

4 eggs

1/4 cup honey

1 tsp vanilla extract

Preheat waffle iron

Separate egg whites and beat with electric mixer until peaks form then add honey, yolks, and vanilla and mix.

Then add flour, baking soda, and salt. Mix well. Pour about 1/2 cup onto hot waffle iron and bake until golden brown.

You don’t have to beat egg whites first- I usually don’t- but the waffle will be heavier or denser than waffles made with wheat flour. I don’t mind the heavier waffle- they make great sandwiches. Try putting some cashew nut butter (or peanut butter), jelly and chia seed between two halves and eating it like a sandwich. FANTASTIC! I also like thinly sliced kiwi and nut butter in a sandwich. This week for a treat I put cool whip (NOT healthy) between two pieces for my niece- she gave it two thumbs up.

We make a batch and freeze them for those early mornings on the road to work cows or going to a rodeo.
